Puerh

Sencha

Sencha is a Japanese green tea which literally means "roasted tea". Sencha is created differently to Chinese green teas, as it’s steamed first for between 15-45 seconds to prevent oxidization of the leaves.

Then, the customary thin cylindrical shape of the tea is formed by rolling, shaping and drying the leaves and then the leaves are fired to preserve them and add flavour.

This also accounts for the different flavour between Chinese and Japanese green tea, with Japanese green tea having a more vegetable, grassy flavour.

Sencha is usually drunk hot in the winter and cool in the summer. It has high levels of Catechin, a polyphenol which is a powerful antioxidant. Antioxidants destroy free radicals, which can damage the body at the cellular level and make it far more susceptible to degenerative diseases.

Catechins are the strongest of all the polyphenols and the most powerful catechin called Epigallocatechin gallate (EGCg), is abundant in green tea.

Catechin destroys free radicals, stopping arterial build up, along with stopping the platelets from clotting which in turn can reduce stress by lowering blood pressure and cholesterol levels. Catechin is also anti-bacterial and helps to lower the risk of heart disease.
